1 stick of margarine or butter

1 cup chocolate chips

1 cup peanut butter

8 cups Rice Chex cereal

2-3 cups of powdered sugar

 

Melt the first three ingredients in the microwave for 1-2 minutes or on the range in a heavy saucepan on low, stirring until all ingredients are melted.

 

Mix the melted ingredients and cereal in a large bowl until all of the cereal is coated with the chocolate mixture.

 

In a plastic garbage bag, add the powdered sugar and the cereal mixture.  Shake until all of the cereal is separated and coated.  More sugar may be added if necessary.

 

 

 

Orange Julius

 

1   6 ounce can of frozen orange juice concentrate

2 cups milk

¼  cup sugar

1 teaspoon vanilla flavoring

6-10 ice cubes or 1 cup crushed ice

 

Place orange juice, sugar, milk and vanilla in the blender.  Blend until mixed.  Add ice cubes one at a time through the opening in the top while the blender is running or add the crushed ice all at once.  Blend until all of the ice is melted.  Serve at once.


Dog Bones

 

Preheat oven to 400 F.

 

1 can refrigerated canned biscuits

Cinnamon and sugar mixture

½ stick melted margarine or butter

 

Flatten each biscuit on a cutting board.

Spread a small amount of melted margarine in the center of each biscuit.  Sprinkle the cinnamon and sugar mixture lightly in the center of the biscuit. 

Roll up the biscuit and pinch the edges together.  Place each biscuit on a cookie sheet and bake for 8-10 minutes.

 

 

 

Chocolate Chip Cake Mix Cookies

 

Preheat oven to 350 F.

 

1  single layer cake mix

1 egg

3 Tablespoons vegetable oil

½ teaspoon vanilla

½ cup chocolate chips

 

Place cake mix, egg, oil and vanilla in a large mixing bowl.  Beat until mixed together.  Add the chocolate chips and mix.  Drop the dough by teaspoonfuls on a cookie sheet 2” apart.  Bake for 8-10 minutes or until cookies are set and start to brown on the edges.


Spanish Rice (Mexican)

 

2 cups minute rice

2 cups water

½ teaspoon salt

1 Tablespoon vegetable oil

¾ cup tomato sauce

1 Tablespoon chili powder

1 Tablespoon Parmesan cheese

Optional- green chilies, onions, hot sauce to taste

 

In a large skillet combine the rice, water, salt and vegetable oil.  Cook on high heat until the mixture comes to a boil.  Reduce the heat to low and add the tomato sauce and chili powder.  Cover pan and continue cooking for 5 minutes.  Sprinkle the cheese over the top and serve.

 

 

 

 

Carmel Popcorn

 

 

1 package of microwave popcorn already popped

or

¼ cup of popcorn kernels popped

 

Place the cooked popcorn in a 9” z 13” baking pan.

 

To make the caramel sauce:

 

½ cup brown sugar, packed

2 Tablespoons light corn syrup

½ stick  ( 4 Tablespoons) margarine or butter

¼ teaspoon baking soda

¼ teaspoon salt

 

Combine ingredients in a medium saucepan and bring to a boil over medium heat.  Stir constantly and boil about 3-5 minutes.  The mixture will darken and become less opaque.  Remove from heat and pour sauce at once over the popcorn.  Stir gently until all of the kernels are coated.  Let cool before handling.

 

 


Microwave Rice Krispie Treats

 

Makes a 9” x 9” square pan or 9 bars

 

¼ cup margarine (1/2 stick)

1 10 ounce package miniature marshmallows

6 cups Rice Krispie cereal

 

Grease the bottom and sides of a 9” x 9” baking pan with butter or margarine.  Place the ¼ cup of margarine or butter in a large glass or plastic bowl and microwave on high for 30 seconds.  Remove and add marshmallows.  Microwave again for 30 seconds.  Remove and stir.  If marshmallows are not melted completely, microwave again for no more than 30 seconds.  Quickly add all of the cereal and stir until all of the cereal is covered.  Immediately pour cereal into the greased baking pan and press until evenly spread using a buttered rubber scraper.  Cool and cut into serving pieces.

 

 

 

 

Easy Donuts   (Canned Biscuits)

 

Canned Refrigerated Biscuits

Vegetable oil for frying

Powdered sugar, cinnamon sugar or frosting

 

Heat at least 1” of vegetable oil in a deep skillet or fryer to 350-400 F.   At the correct temperature small bubbles will form around the dough but it should not create smoke. 

 

Open the can of biscuits and separate each one.  Cut or make a hole in the center of the dough.  Gently drop the dough into the got oil and cook until the edges are brown.  Turn the dough over and cook on the other side.  Carefully remove from heat and cover with the sugar or frosting.  Eat while warm.


 

Mini Pizzas—Canned Biscuits

 

Preheat the oven to 400.

 

1 can refrigerated biscuit dough

Spaghetti Sauce

Mozzarella cheese

Toppings

 

Open the can of biscuits, separate each one and flatten on a cookie sheet.  They will rise in the oven, so make them as flat as possible.  Spread spaghetti sauce on the biscuit and sprinkle cheese and toppings on each one.  Bake 8-10 minutes in the center of the oven until the cheese is melted and the edges just begin to brown.  The bottoms brown first, so do not over cook or the bottoms will burn.

 

 

 

Mini Pizzas—English Muffins or Toasted Bread

 

½ English Muffin or 1 slice of toasted bread

Spaghetti Sauce

Mozzarella cheese

Toppings

 

Spread sauce, cheese and toppings on top of muffin or toast.  Microwave for 30 seconds or bake for 5-8 minutes at 400 degrees or until the cheese is melted.

 

 

Peanut Butter Balls

 

1 cup peanut butter

1 cup dry powdered milk

1 cup powdered sugar

1 cup mini chocolate chips

Graham cracker crumbs--optional

 

Mix the ingredients together in a bowl.

 

Add 1 tablespoon of water at a time, stirring the mixture after each spoonful until the mixture holds together.  If you put in too much water, it will be too sticky.

 

Roll the mixture into balls and then into graham cracker crumbs or additional powdered sugar.  Some recipes suggest dipping the balls in melted chocolate.
